Chestnut pies with Ricotta cheese and Balsamic Vinegar of Modena PGI
Ingredients
100g flour type “00”
100g chestnut flour
50g cocoa
140g sugar
200g Ricotta cheese
1 egg
1 teaspoon of Balsamic Vinegar of Modena IPG
40 g butter
2 tsp of baking powder
Pinch of salt
q.s. icing sugar

In a bowl mix ricotta cheese and egg, then stir until nice and creamy. Add the sugar, the flours and baking powder (sieved) and the cocoa, then mix well. Finally, pour the melted butter, the Balsamic Vinegar of Modena PGI and a pinch of salt. Stir the compound, then pour into muffin cups in a muffin tin and bake at 180°C for 15 minutes. After taking out of the oven, dust the pies with icing sugar.
